Five Question Friday

Its Friday again…finally!  I have had a crazy busy week and am looking forward to a semi-relaxing weekend, with the exception of school.  But before I can do that, we need to have our next installment of Five Question Friday to get this weekend started properly.  So here ya go:

1. Groceries are high right now what is easiest way you have found to cut back?

I find that when I actually take the time to look in my freezer and cupboards to see what I have lurking in there, and then try to build meals around those items, as well as try to make a weekly menu, I generally cut back on my grocery bill. I also try to stock up on sale items and buy things from Costco.

2. What are the top 3 things on your “bucket list”?

#1 African Safari, #2 go on a helicopter ride, #3 swim with dolphins (it used to be ride an elephant, but I did that last year).

3. Would you rather give up AC or heat?

heat.  I am always running hot and I hate, HATE being hot and trying to sleep, because I just can’t.  I think its easier to put clothes or blankets on to get warm, then to try to cool yourself down.

4. What’s your favorite cocktail??

I tend to order margaritas or martinis. I’m always open to trying something new, if you have any suggestions.

5. What was your first job & how old were you?

other than babysitting, I would say my first job was when I was a senior in high school at it was working at Burger King….I was the queen of the drive through 😉

Five Question Friday

Happy GOOD FRIDAY everyone!

Here is the weekly installment of Five Question Friday. As usual, feel free to answer the questions for yourself in the comments below. Have a wonderful weekend and a blessed Easter!

1). Would you prefer having people over for dinner or going to their house?
I love entertaining for others. I consider myself a good cook and have lots of fun products to make hosting a dinner party fun. However, I live in an apartment complex and there is NO guest parking. So it makes it very difficult to have anyone over. I also enjoy going to other people’s homes for dinner – who wouldn’t love someone else to cook for you. BUT, because of my food allergies/issues, I know that it can be really hard/stressful to do that, both on the person cooking and on me if I haven’t checked with them ahead of time for the menu.

2). Favorite Bible verse and why?
Proverbs 3:5-6 “Trust in the Lord with all your heart and lean not on your own understanding, in all ways acknowledge Him and He will direct your paths.” How comforting to know that He will guide us always and in all things…we don’t have to have it figured out. I also love Jeremiah 29:11 “For I know the plans I have for you,’ declares the LORD, ‘plans to prosper you and not to harm you, plans to give you hope and a future.”

3). What was the first concert you ever attended, and the most recent one?
The first one that I went to was Tori Amos, back in 1992 I think. It’s been awhile. The most recent one, was not so recent, and that was Colbie Caillet and that was 2007. I have gone to see some of my friends that are starting out in the music business perform shows at various locations in LA but as far as a concert, the last one was Colbie. Maybe I’ll add “go to a concert” to my bucket list for this year.

4). The year is 2025. What are you doing, and what have you done?
Only God knows. I would hope that I will be happily married with at least a couple of kids, and a successful photography business, so that I can quit my full time job, and have more time to be at home with the kiddos and hubby. I hope to have been able to travel.

5). What’s your favorite Easter treat?
I love Cadbury Eggs, the ones with the caramel inside, but the regular ones are ok. Also any combination of chocolate and peanut butter, or chocolate with nuts is a favorite as well. My lease favorite are Peeps…I think they are gross. Maybe it’s the texture or something, but I just can’t bring myself to like them (sorry Peeps lovers).

Red Currant Pomegranate Glazed Ham

Easter is quickly approaching and I’m getting nervous about making the main dish – the HAM – for the boyfriend and his family, especially after he just told me that his mother has gone to culinary school….pressure!  I have decided to make a red currant/pomegranate glazed ham in the crock pot because hopefully it should be easier than roasting it in the oven, and it sounds so yummy and flavorful.

Here is the recipe:


1 sm. bone in half ham ( about 6 lbs. )

1 cpomegranate juice

1/2 cred current jelly

2 Tbsp dijon mustard

1/4 cdark brown sugar ( packed )


Place Ham in Crock Pot, Pour Pomegranate juice in, Put on Cover and Set to Cook on Low for 4 to 6 Hour, Basting once or Twice with juice in Crock Pot

In A Small pan- Over Medium Low Heat , Put Jelly in Pan and Cook , Stirring untill the Jelly Has Softened, – Then pour through a fine mesh Sieve, Into a Bowl , Discard All Solids – and Cover Bowl, Set in the Frig. Till ready to use.

About 45 minutes before Ham is Done, Take Jelly out of Frig. and put into a Sauce Pan – Take 3 TBSP. of the Liquid from the Crock Pot and mix in with the Jelly in the Pan, – Add in the Mustard and Brown Sugar, stir to combine and Place Pan Over High Heat , Bring to a boil and Stir untill the Sugar Is Dissolved, Then Take Off Heat and set Aside.

Remove 1 Cup of the Cooking Liquid From the Crock Pot and Discard – Pour the Jelly Mixture in the Sauce Pan over the Ham .
Replace Cover on Crock Pot and Turn HEAT TO HIGH, BASTE the HAM Often with the Liquid, Cook For 30 to 45 more Minutes, Untill Ham Is Shiney and Glazed. When Ham is Cooked, transfer to a Platter and Let Sit for 15 Minutes at Room Temp. Before serving.
